VENISON MEDALLIONS WITH QUAIL EGG AND PEPPER CHEESE COUROISIER SAUCE

This is one of my favorite apps to make and serve. I only make it with venison back strap medallions. Quail eggs have a taste of their own and are great for small servings.

Ingredients;

Venison back strap medallions
Quail eggs
three cheese mix
onion
garlic
courvoirsier
black pepper
paprika
heavy cream
